Rotini with Eggs and Vegetables

Simple and easy
Good for Phase 1 – 4


2 packages of Ideal Protein Rotini or Tomato Basil Rotini
2 cups Broccoli
1.5 cups Mushrooms
.5 cups Cherry Tomatoes
2 Eggs
Sea salt
Fresh ground pepper
Spray can of olive oil


Place cherry tomatoes on aluminum foil with edges of foil turned up,
sprinkle with sea salt and bake in oven at 350 until tender
(tomatoes skins will be wrinkled and tomatoes mostly drained of water
when ready).
Cook Rotini per directions on box.
Cut/slice broccoli and mushrooms into bite size pieces.
Spray large sauce pan with olive oil.
Drain water off cooked tomatoes and place
cut/sliced vegetables and cooked tomatoes in large sauce pan and cover,
saute on low/medium heat until vegetables are tender.
Add eggs to vegetables when vegetables are tender and scramble eggs
until done.
Add cooked Rotini to vegetables and eggs and mix together.
Season with sea salt and ground pepper to taste.

Serving Suggestions:

Serves 2, share with a friend or adjust ingredients for one.
Serve warm.
Good for lunch or dinner.
